Ines Perafan grew up in a coffee family.* Now, she and her daughter Sandra grow coffee on Los Olivos, their farm in the small township of Puerto Lleras in Huila. Ines's coffee has been recognized for its high quality by the Cup of Excellence in 2011.
Ines processes the coffee meticulously. Picked at optimal ripeness, the cherries undergo an initial 12-24 hour ferment, before being depulped (where the outer layers of the coffee are removed), and then fermented for a further 36-40 hours in a tank. After washing, the coffee drys in the sun for about 15 days and under a shade cloth for a further 10 days or more. The parchment coffee is then stored in grainpro bags to ensure stable humidity.
Ines is a member of Los Guacheros, a group of small farmers who support each other, for example, by sharing information on best practices, and maintaining each other's farms when needed.
